Skalaen blev udviklet af den amerikanske farmaceut Wilbur Scoville i 1912.<\/p>\n\n\n\n<div class=\"wp-block-columns is-layout-flex wp-container-core-columns-is-layout-9d6595d7 wp-block-columns-is-layout-flex\">\n<div class=\"wp-block-column is-layout-flow wp-block-column-is-layout-flow\" style=\"flex-basis:66.66%\">\n<p>Hvordan fungerer Scoville-skalaen?<br>M\u00e5ling af Capsaicinoider: SHU m\u00e5ler koncentrationen af capsaicinoider, som er de kemiske forbindelser, der giver chilipebre deres varme. Capsaicin er den mest fremtr\u00e6dende af disse forbindelser.<br>Scoville Organoleptisk Test: Oprindeligt blev styrken m\u00e5lt ved at opl\u00f8se en pr\u00e6cis m\u00e6ngde t\u00f8rret chili i alkohol for at udtr\u00e6kke capsaicinoiderne.
